Coconut Ice
You will need:
(for approximately 36 pieces) |

- 1 can sweetened condensed milk
- 6 oz (175g) dessicated coconut
- 9 oz (270g) sieved icing sugar
- 50g (2 oz) raisins
- few drops red food colouring
- cornflour

Method
- Sieve the icing sugar to get out any lumps
- Gradually stir in the condensed milk and coconut using a wooden spoon.
- Divide the mixture into 2. Put half on one side.
- Colour the rest pink by adding a very tiny drop of food colouring at a time.
- Sprinkle a little cornflour into a shallow tin 7 inches (18 cm) square to prevent the mixture sticking.
- Spread the pink mixture evenly in the tin and level it with the back of a spoon.
- Then spread the white coconut ice on top and again level off with a spoon.
- Leave in the refrigerator until the coconut ice is set, then cut into about small squares.
