Coconut Ice

You will need:
(for approximately 36 pieces)
 
  • 1 can sweetened condensed milk
  • 6 oz (175g) dessicated coconut
  • 9 oz (270g) sieved icing sugar
  • 50g (2 oz) raisins
  • few drops red food colouring
  • cornflour

Method

  1. Sieve the icing sugar to get out any lumps
  2. Gradually stir in the condensed milk and coconut using a wooden spoon.
  3. Divide the mixture into 2. Put half on one side.
  4. Colour the rest pink by adding a very tiny drop of food colouring at a time.
  5. Sprinkle a little cornflour into a shallow tin 7 inches (18 cm) square to prevent the mixture sticking.
  6. Spread the pink mixture evenly in the tin and level it with the back of a spoon.
  7. Then spread the white coconut ice on top and again level off with a spoon.
  8. Leave in the refrigerator until the coconut ice is set, then cut into about small squares.
