Malt and Honey Flapjacks

Ingredients
(makes 20)
  • 125g (4 oz) margarine or butter)
  • 90 ml. (3 fl.oz) clear honey
  • 1 tablespoon malt extract
  • 300g (10oz) muesli
  • 25g (1 oz) sunflower seeds

Method

  1. Pre-heat the oven to 180°C (350°F), Gas Mark 4.
  2. Place the margarine or butter, honey and malt extract in a saucepan and heat gently until melted.
  3. Remove from the heat, stir in the muesli and sunflower seeds and mix thoroughly.
  4. Turn into a greased shallow tin 7 x 11 inches (18 x 28cm) and smooth the top with a palette knife.
  5. Bake for 25 to 30 minutes until golden brown. Cool in the tin for 2 minutes, then cut into fingers. Allow to cool completely before removing the flapjacks from the tin. Store in an airtight container.
